I find that the built-in tutorials are really quite good. And they tend to stay up-to-date with the latest version of the software. I have a YouTube channel (https://www.youtube.com/playlist?list=PLLGIZCXnKbU6VRkvB99Qciw8P6mZfZZtw) that I use for my undergraduate teaching - mainly discrete event simulation - that is featured on the AnyLogic website as well... but I'm not very diligent in updating those when newer versions of AnyLogic comes out.

Simulation, to me, is "learning by doing". So I suggest you start modelling on the problem that you ultimately want to solve. First a basic, much simplified version, and adding more detail.

The tutorials of the software itself is very useful.

Anylogic tutorial projects are the best way to learn, especially if you have no experience with Anylogic.

I strongly recommend the “Bank Office (Queueing system)” tutorial as a simple and a straight forward introduction to discrete event simulation.
