I am aware of FDA being the reference institution for food production control. However, I am not sure which guidance in particular defines the testing which are required to be performed?
It depends which country you are working in. But as a general rule, it is the Government agency mandated to ensure food safety and quality that determines which tests and for which products that must be carried out.
from your question it is not clear to me what you are exactly looking for. There are very specific guidelines out there for various food production industries like Dairy, meat, bakery etc. For what type of food production control you are looking after?

I am mostly interested in regulations applying to UK/Europe food manufacturers. Also, I was not referring to any specific kind of food but more in general to all products falling within the food category.
Having said that, I was particularly looking for FDA (or equivalent institution) general guidelines recommending which are the testing manufacturers have to perform on food (in general).
There are 3 most important regulations that apply in all European Union countries. On the basis of these regulations food manufacturers are obliged to perform food analysis. Please find below:
- microbiological requirements:

Of course, there could be also some national requirements, but you have to ask food control authorities in the particular country for that. We have no specific national requirements for food testing in Poland :)
