Calcium hydroxide can be used as a pH adjustment. In the case of pectin nanoparticles, it may also be used as a cross-linking agent, since divalent cations such as Ca2+ or Zn2+ can cross-link pectin and thus form nanoparticles. If you want to use it as a crosslinker and do not want to increase the pH, you can substitute it with CaCl2.
