It doesn't necessarily 'kill' the virus - but it diminishes its efefctiveness and capacity to spread. Emolients etc appear to break down the surface of the virus. The other reason is that it appears that the virus can survive for quite some time on surfaces. If you touch such a surface i.e a shopping trolley that is infected (and then touch your face (hence the message not to) then you can infect yourself that way. Most assume it is passed on by airborn droplets.

It is not just washing the hands, but washing them with soap under running water and/or alcohol-based hand rub.

In the current moment that we are experiencing with coronavirus, when we wash our hands with soap / liquid soap / detergent and even with shampoos, we are able to remove them. This is because these products are great in removing dirt / grease from surfaces, and in the case of the virus, it has a "protective layer" made of lipids (grease).
