Currently working on designing test rig of oil extraction with heating chamber and condenser as a cooling system . Vapor from the heating chamber is cooled in the condenser . Since copper tube is expensive I'm planning to use aluminium tube as coiled fin in the condenser .

the important consideration is material heat conduction and convection properties, condenser with fins is more efficient. air cooled or water cooled, the temperature drop and condenser area, location of condenser etc,,,
First of all you must estimate the cooling load or the heat to be removed when condensing the oil vapours. Then choose the proper material of the condenser that will not react or contaminate the product you are dealing with specifically if it is for human consumption. Then after that start designing the condenser by calculating the surface area needed and choose the cooling media( I suggest cooling water may be better in your case).
