the best way is method Kjeldahl method
Kjeldahl method gives the best estimate if the Protein factor (= N factor) of your fish flesh is about = 6.25
(Other conversion factors:6.38 for dairy products; 5.83 for most grains; 5.70 for wheat flour, and 5.46 for peanuts)
You can chek with the sum of amino acid.
In addition, the expression of the protein value is gotten when the protein factor is the value of 1 g N. SO that in 100g protein, 16gN is present. 16 is the standard value of nitrogen for protein
The most appropriate method for determination of protein content is Kjeldhal method and the conversion factor is about 6.25.
