I'm interested in somatosensory metabolism in a model of cortical malformation with susceptibility to absence seizures.

The cerebellum is often used as a reference region for normalisation in FDG-PET studies involving the somatosensory cortex. However, you should validate this choice for your specific model of cortical malformation and absence seizures.
