I am trying to develop a method for capsanthin analysis in local peppers using HPLC. But the articles I have been reading call for a rotary evaporator which my lab does not have, and another lab has it but it has been down. Is there an alternative that I can use? I was attempting to use the simple distillation method but I get a thick tar looking residue.

The most suitable method as an alternative to the evaporator is simple distillation or distillation under vacuum conditions. If your sample consists of heavy components such as tar, you can dissolve it in a suitable solvent.
Wiped Film Evaporators can be applied alternatively. But these are not common in labs if only frequently required.
You can imitate a rotary evaporator with a vacuum flask, heat source, magnetic stirrer, and vacuum source (pump or water aspirator). A condenser would also be helpful but not essential. The heat source is preferably a hot water bath, but a hot plate can work if carefully regulated.
