Heavy metals such as Cd, Hg and Pb will accumulate in organs - kidney and liver, as well as in muscle. I'm not quite sure what you mean by wanting to establish biomarkers, but in man the established 'test' is a blood level (hair and nails are also used but not ideal). Bone levels can give you information about longer term exposure.
