I'm working on a project that develops a fluorescent probe for a group of enzymes. The probe will be selective to an individual protein because part of the probe is the protein sequence.
The probe will allow for determining enzyme activity of each protein in vivo and vitro. It also allow us to see the dynamic of the protein by fluorescence microscopy.
I am asking for your advice about what some examples related to biology I can use my probe to investigate. Please tell me any ideas I can go after, or some papers you think may be helpful. This will lead to my thesis project.

As you said, the probe is quite selective for a group of enzymes, it can be suggested to work on organophosphates sensing using enzyme based probes.
Assuming that the probe behaves the same way as the protein on which it is based, you could use the probes to localize the proteins within the cell. By inhibiting protein synthesis, you could follow the fate of the protein as it moves through cell compartments. With two probes having different wavelengths, you could look for interactions between pairs of proteins within the cellular environment. You might be able to quantify the amount of the protein within the cell based on the amount of its fluorescence.
