What can be the major vegetarian resources for development of functional foods for alleviation of Vitamin D and Calcium deficiency for different sections of society ( children, pregnant women, post-menopausal woman etc.)
Very little is known about vitamin D in plants, although it is known that mushrooms, if they have been exposed to UV irradiation, are a good source of vitamin D in the form of ergocalciferol. Plants from the potato family, the gourd family, the legume family, and the grass family have been found to contain vitamin D in the form of cholecalciferol, though there have been very few studies. I suspect that vitamin D may be present in all plants. Algae may also be a good source of vitamin D, however I am not aware of any studies that have performed the relevant analysis. This is a potentially rich field for exploration.
