As general online teaching programs I use Zoom, Moodle, Pepplepad and Thinglink. Then I use other specific software for arts.
What about the remote editing of a draft manuscript under the full collective observation of all the participants in a meeting?
Moodle c'est assez riche comme plateforme et on peut rajouter beaucoup de blugins intéressants. De plus c'est open source.
On peut aussi utiliser g-suite comme la classroom pour communiquer avec ses étudiants et leur proposer des devoirs et des quiz pouvant être conçus avec Google formés. Pour le cours on ligne, on peut utiliser Google meet ou zoom.

All of the platforms are ploys made by the so called "educational companies", to finalize their takeover of education and are in truth, "wolves in sheep's clothing", publishing conglomerates, and should not be allowed to pay their way into education. Can one fathom, for one moment, allowing big business into the minds of our children? We need not fathom it, it is already the case. Stand up for the children, do not allow big business profiteers to infiltrate your homes, in the guise of education.

In the best of cases, I try to use Moodle teaching philosophy combined with the open learn university philosophy in the way they teach courses, Op Un has CC commons licenses on some material. In addition, I use Khan Academy classroom material which is available in Spanish in their virtual environment.

I think I have to use the online, offline, modular, and video clip Techniques.
I prefer to use Zoom platform for live sessions and for recording videos. Also, I use Telegram for delivering recorded lectures.
