Hi,

There are several bacterial species which produces Protease enzyme some are like: Serratia marcescence; Pseudomonas aeruginosa; Streptomyces griseus; Staphylococcus aureus; Aerococcus viridian; Staphylococcus hyicus; E. coli ; Streptococcus sp.

For the production of Protease enzyme from fungus you can use the Aspergillus niger .

there are many microorganisms that produce protease, but some are virulent and pathogenic. so I advise the use of Saccharomyces cerevisiae (non- pathogenic yeast with high production of protease)
