Covid19.analytics package is available in RStat. I used it to generate a SIR Model for our country Nepal(Refer the image below). I was curious about the significance of SIR Model. Is it just limited with plotting of susceptible, infected and recovered--or is there more to it?

You can further strengthen the information that get synthesized in your these graphical representations.
Find the various elements responsible for infecting the people's with COVID19 per day, further convert days into hours to increase reliability factors. Now, technical analysis of each element constituting SIR model would set a trend of infection. The curved lines can get further elaborate to find mathematical trends, by the applications of coordinate geometry or computational methods.
Ultimately your work should highlight functioning/trends of each element's to enable a strategic planning to control spread of this COVID19 pandemic.
