I think simple tests like detection of potato viruses or detection of citrus viruses using double antibody sandwich ELISA will be simple and best.

You can buy any commercially available ELISA kit for detecting any anti-viral IgM or IgG and then can use the positive and negative controls which will work without doubt for demonstration in practicals.
