I guess which protein will also depend on the symmetry you are looking for. A typical hexamer would be insulin. There are also hexameric leucine zippers (Zaccai, N. R.; Chi, B.; Thomson, A. R.; Boyle, A. L.; Bartlett, G. J.; Bruning, M.; Linden, N.; Sessions, R. B.; Booth, P. J.; Brady, R. L.; Woolfson, D. N. Nat. Chem. Biol. 2011, 7, 935–941). There are also some natural proteins such as the beta-clamp of E. coli (PDB: 2POL), but If you could do with a pentamer, then I'd really take a look at the Shiga-like Toxin B-subunit (Lassabe, G.; Rossotti, M.; González-Techera, A.; González-Sapienza, G. Anal. Chem. 2014, 86, 5541–5546).
