i have found a new source of mucilage which has excellent properties for being commercialized such as easy availability, simple extraction method, and very desirable appearance properties but i need help to know which test are needed for characterizations and studying its functional properties. because my dissertation is on completely different subject and we don't have the special devices for identification of new source of gums

Sound interesting! It depends on the target application e.g. food science or pharmaceutical application and what would be the advantages of this mucilage compared to other existing. you can check the functional groups/bonds (FTIR/NMR), molecular weight (GPC), thermals stability and thermal behaviour (TGA/DSC), gelling ability, water holding ability, elemental analysis (CNH analyser), visco-elastic properties (rheometer), anti microbial properties and cell attachment, etc.

as my masters studies was on functional properties of an indigenous Iranian gum, i can tell it will be applicable in food industry but as you mentioned, it needs different characterization tests to get sure about its novel properties
