Microorganism would like to attack in which type of molecular bonding?(especially which type of atoms?)

By read these text, I found that they degrade structures that have carbon atom, its mean they don't attack to another atom or bond like: O, C=O, ....?

Nucleases and phosphatases break O-P bonds, as an example of a non-carbon-containing bond that is broken by enzymes. The nitrogenase enzyme breaks the extremely stable N-N triple bond in N2.
