Sometimes, I find myself correcting students' papers full of passages taken from other researchers. Most of the time, they say that they don't know that they are victims of plagiarism, and some other times they say that there is a certain percentage of acceptance of others' words and whole passsages without qualifying this use as plagiarism. Is this true?

I'd dare to say most students claim innocence when confronted with perpetrating plagiarism. However, I've had some colleagues that use certain resources, such as turnitin, that provides a percentage. At my university, Turnitin check (aka: similarity check) against plagiarism is a must. However, the accepted percentage varies from faculty to another. At my faculty, the maximum accepted similarity percentage is 4%.
During the first semester of my Master degree studies, my favorite professor had to fail me in his subject because I copied -quoted- some paragraphs in my research paper from another published research. That was the time I had been introduced to the notions of "Plagiarism" and "Research", later in the following semester I had been introduced to "Research Methodology".
I suggest that you make yourself clear to your students while you instruct them. Tell them that there are out there something called "Plagiarism" and "Research Methodology". After clearly setting up the rules, you may fail any student for "plagiarism".
