If you scale both x and y by z, scaled x and y will be influenced by the third variable. Regression analysis would be problematic in this case.

I assume the "cultured area" is the ratio scaled variable (unit?) and the attitude is some kind of rating scale (completely disagree - ... - agree). If so, you might consider a regression model of cult.ar. on the attitude with the latter dummy-coded. If you use some kind of adjacent coding (e.g. Helmert), you may assess the effect of changing from one category to the next. The R2 will show you the portion of explained variance.
