Yes, you can evaporate FBS by speedvac..but it will result in concentration of FBS proteins with cells and I doubt that you will be able to separate those proteins by any method....I used to do a high speed centrifugation by keeping the cap open of the vial/eppendorff...but it used to heat up the samples due to energy generated by high speed. You can give it a try..

You can only eliminate water and DMSO under vacuum, not the the other water soluble components of FBS.  

Simply you can thaw your cell pellet and wash 3 times with ice cold PBS and then dry, which will reduced significant amount of FBS or DMSO from the stock.
