I have searched two international biology books. Both show that the protons come from glycerol. But I thought that glycerol is like alcohol, that means it contributes the hydroxyl group. On the other hand, fatty acids are weak acids. Yet weak acids still ionize slightly to produce H+ ions.

I hope some biochemistry or organic chemistry experts will enlighten me on this. Thanks.
