If you're looking for previous work in this area, the seminal paper on participatory simulations was written by Vanessa Colella back in 2000:

If you want more recent work, look at papers that cite Colella
One idea: use location data (inferred from cell IDs) and see, how a theoretical infection would spread considering the subject's motion patterns.
One warning, however. Can you assume that the users having mobile phones are representative of the population in the area? E.g. what if only a relatively small segment of the population has mobile phone? Then any simulation you base on mobile phone data will not be representative of the population in question.
