You should look at the increasing number of articles on occupant behavior and climate control that have been published over the past 5 years or so in Building Research & Information, (BRI)
Regarding the "pollution" generated by people, you could have a look to the report ISO CR 1752:1998. There you can find energy, CO2 and vapor produced by humans depending on their phisical and metabolic activity.
This is an essential part of Adaptive Comfort Theory, and there has been significant work in this field by Brager, de Dear, Nicol, and Humphreys. And I've had a go at it too. I hope this is useful.
