Since the iodine binds to the double bonds, I have learned that it is a destructive methods that oxidizes the double bond. If you want to do fatty acid analyses after your separation, I recommend staining with 0.05% 2,7 dichlorofluorescein in ethanol. Lipid spots will fluoresce under UV, without affecting double bonds.
