Freezing stress can induce water loss due to the fact that formed ice breaks the membrane and electrolyte flux out of cell. However, chilling stress can also cause water loss.several reports showed the close relation with water uptake inhibition in plant, but this can not explain the warter loss for detached horticultural products by chilling condition. So, how to undertand chilling-induced cellular water deficit?
horticultural products can loss water under chilling or cryopreserved conditions through respiratory activities. it the plant part or seeds used was not dried to adequate moisture content before preservation. the water deficit is occasioned by breakdown of cell water or sap and carbohydrate in the tissue releasing gases which are taken up by the cooling agent used for the chilling or cryopreservation.
Ice nucleus first build up in the intercellular spaces where pure water is occurred with increasingly reduction of temperature ice attract water from cytoplasm, increasing the ice crystal until it extended to cell wall destructing them. Finally, owing to water attraction, the hydrophillic parts of the cellular membrane is affected and thus cellular membrane deformed, enzymes fractionated in to cytoplasm
In any chilling room the vapour pressure difference between cooling condensern and plant tissues detrmines water loss prortional to temperature difference and boundary layer conditions. It is the the warapping technology and differential gas permeability to drive dessication and anoxic reactions.
Low temperature can trigger stoma closure and prevent against gas permeability, and respiratory activity will also be repressed. Assuming the fruit are stored under low temperature and high humidity (100%) condition, will they show lower level of water loss than fruit at room temperature and high humidity (100%) ?
