I did alginate gel/bead for making pulpy orange analog, when I studied in master degree. I made false that bead of alginate in cool storage that make the bead like a plastics and rigids structure. I suggest you for drying alginate bead by freeze drying but I ask you, why you should make alginate bead dried?
