How to measure viral disease resistance among various breeds or species?

I want to evaluate genetic resistance of various poultry breeds or bird species to a viral infection. Is there a genetic basis for disease resistance on breed level? Although receptor shapes may determine host susceptibility on species level. How to quantify it during experimental infections? If there is any variation, could it be due to antibody response or innate immunity? Any ideas, suggestions, literature citations?
