The protocol that comes inside the box doesn't say how can we perform
RNA extraction from whole blood using the Kit
We have searched online for the long version of the manual and it doesn't show
how to do so for human blood (just from tissues, yeast, bacteria...)

Probably there is no protocol because Qiagen sell a specific blood rna rneasy kit which they prefer that you use.
Possibly you could separate the white cells ,count the cells in your cleaned up sample and use 1-10x10exp7 cells using the cell culture protocol. You may have to check the expected amount of rna in calculating the number of cells which will not overload the column
