im going to do macroalgae enzymatic hydrolysis with bromelain how can i defined the right amount to start hydrolysis process?

Experimentally, you need an assay that allows you to measure the progress of the reaction. Once you have set that up, you can vary the amount of bromelain to add to a specific amount of the macroalgae, and measure the rate of the reaction for each amount of bromelain.
