I am planning to do a study assessing knowledge using a newly-developed questionnaire. I have already done a pilot study with 30 participants. If I were to categorize the level of knowledge i.e high, medium or low for data analysis, is there any way I can decide which scores to which category using the findings of my pilot study? Or is there any other way I can use to divide the scores into categories?

Why do you want to divide a continuous variable into three categories? This amounts to a "loss of information" and it also limits the statistical tests that you can use.

The general rule for ordinal data is to use of minimum of 5 rankings. Look at the literature on Goal Attainment Scaling. A ranking of 5 is more manageable than 4 or 6.
