I am currently working with oxidation of starch. However, I am having issues with chlorate in my starch after it has been dried. I am using sodiumhypochlorite for oxidation.
My problem is however, I cannot seem to find any litterature that explain what happens with chlorate during storage (before used in oxidation), when used in oxidation and what happens with it when I try to wash it off (I can find it after I have washed the product, where is it located in the starch?)

could you please give some more information regarding your experiments, so that we can help you better?
For instance, you could quote some literature dealing with hypochlorite oxidation of starch; from that we can see what you want to achieve.
You wrote, "I am having issues with chlorate in my starch after it has been dried." This sounds like you prepared a dry, solid mixture of chlorate and starch. Be aware that this mixture might be explosive.
You wrote "My problem is however, I cannot seem to find any literature that explains what happens with chlorate during storage (before used in oxidation).." Nothing happens with chlorate when stored properly. This is contrary to hypochlorite, which decomposes slowly.
As a final comment, the reduction potential of chlorate is dependent on the pH, so assuming you try to oxidize starch in an aqueous solution,
I would expect this will not work over the whole pH range.
