From a metabolic view point, there appear two possible explanations. The fist one realtes to the importance of carbioxylatiing reactions, e.g. involved in anaplerotic fueling of the TCA cycle. These are driven by elevated amounts of CO2 (which is one of the substrates of the corresponding enzyme such as PEP or pyruvate carboxylase. Capnophilic microorganisms heavily depend on elevated CO2 levels. The second one could be a buffering effect with a positive influence on medium pH.
