Look into the papers by Gerhard Braunitzer. He has described separation of Hb Chains for various species using old ion exchange materials. With the equivalent newer media and HPLC this should work even better.
Prepared from fresh blood (the best your own) alpha abd beta hemoglobin chains remain stable in buffer for atleast a week, in the cold. The chains are somewhat unfolded as long as they remain isolated.
