You know, Kirk, I've been finding that you don't need to compromise anything. The world has an incredible way of becoming smaller, which means, you can now choose to eat any types of food, in many countries. Even more amazing is that it's not just foreigners who accept the more varied diets, it's also the locals.
For example, it's no mystery that olive oil is far better in your diet than animal fat. Lo and behold, olive oil has become readily available just about everywhere now. So much so, that we can only conclude that even locals have been incorporating into their diets. It's not some rarity that you can only buy at those distant specialty stores. There are more and more items that fit this description.
From personal observation, this trend seems to have really taken off, beginning in the mid to late 1970s, in the West in general. So, it becomes more a matter of individual choice, rather than more complicated cultural or political decisions. It is just as easy to make a delicious insalata caprese sandwich as it is to make a grilled cheese sandwich, for example.
