I would like to talk to a pathologist who knows about sugar fungi such as Rhizopus stolonifer and Cladosporium cladosporioides, and who can help me understand their function in degrading sugar solutions.  I am wondering if there are other fungi that will primarily use sugars as substrates and not produce cellulases or pectinases or if the production of cellulases depends on certain factors and conditions. I can find mostly only old references on reproduction and lifecycle.
