Assuming you know your Fe concentration in your sample, wouldn't it be easy just to measure the R2 of the solvent and then extract the relaxivity R from:

R2=R2(solvent)+ R * [Fe]

I'm not sure whether I got the problem correctly: If the solvent is known, it should usually be possible to produce a dilution of the sample with the solvent as well. If there's just one sample with no chance to dilute it, the solvent relaxation rate might be atricky thing to determine as well. Itamar's approach works perfectly for a known solvent with known solvent relaxation rate. However, if the solvent relaxation rate needs to be guessed because there's really just one sample with unknown solvent properties (e.g. serum with dissolved polymers), precision may suffer from imprecise guesses of the solvent properties.
