How can ı select appropriate Multiphase model for Liquid-Liquid ?

I have two different liquid.Water and CMC , I want to mix them in a mixer. CMC is non-newtonian material. Under the constant temperature condition I want to know which multıphase model do I have to use VOF,Mıxture..?
