I just liked to share my experience working with enzymes! As we sometimes have to assay the desired enzyme activities, we store them in the freezer and later, we defrost them in the refrigerator.
Regarding your question, I think if you can't keep the samples frozen in the freezer, why don't you try to freeze dry them? Or at least, you can lyophilize and powder them!?
I would store the food in small pieces that can be frozen quickly and thawed quickly. By a small piece, I mean something that would fit in a 1-ml cryotube.
