Use MATLAB for 3 -D graph. Below are some functions which may be helpful for plotting the 3-D graph.

surf:   3-D shaded surface plot

surfc(X,Y,Z):   Contour plot under a 3-D shaded surface plot. For example

[X,Y,Z] = peaks(30);

figure

surfc(X,Y,Z)

Other functions are :

surface :        Create surface object

surfl       :       Surface plot with colormap-based lighting

surfnorm:      Compute and display 3-D surface normals

unfortunately, i don't use matlab and i have very weak mathematics background. that's why i think originlab is easier solution for me.

unfortunately I don't have Origin on this computer, so I have to give an answer by heart:

If I understand you correctly, you need to work with a matrix, in which your rows are (e.g.) the excitation wavelengths, with the columns being your emission wavelength. The value of the respective matrix element is your intensity. This matrix can then be plotted as a contour plot or something like that.

I'm afraid, I cannot give you the exact order of menu you need to do this, but maybe this helps enough to get along with the Origin help or maybe you can find out the rest on your own.

You can plot it with BioVinci. The software lets you drag and drop columns to placeholders, so it's quite easy to produce. The 3D plot over there is interactive, which means you can zoom in/out, or rotate it. I think it's worth a try (https://vinci.bioturing.com)
