If not, any recs for a good pH sensor to use in the lab for in vitro assays?

One of the best places to look at is Physics today buyer’s guide (published by American Institute of Physics, USA and available to APS members). Older issues also serve the purpose.

Mettler and Thermo Fisher Scientific make.

pH sensors are mostly potentiometric type and the manufacturer's specifications give details.

Sensorex, California, USA make pH sensors which can have accuracy of 0.04pH.
