You have hit the nail on the head with this one. IoT security is wide open for research. You should also learn about cloud computing and big data, two of the enabling technologies for IoT. There are no security standards yet in place for IoT. A great deal of the equipment used lacks any kind of built in security, leaving it wide open to attack. Check out last year's mass DDOS attacks with IoT devices. The OWASP organisation is investigating 130 known vulnerabilities, which you might want to check out. I have attached a link to OWASP, and I include a list of IoT, Cloud and big data papers for you from my personal collection. These papers can mostly be downloaded for free from Google Scholar.
I would recommend you install Mendeley for reference management (free for the first 2GB - enough for several thousand average sized pdf files). As well as your citations, it also holds your pdf files, and they are searchable. There is a free plug-in for Word and LibreOffice Writer, and it works very well with Latex.
I suggest you download these papers and read them. This will give you an excellent background before you choose the area that particularly interests you. Better to understand what the background is before you choose a specific area.

Since application area if IoT is increasing in an exponential way, in future vast amount of higher dimensional data will be generated and maybe it will be must to analyze those data for taking immediate action or for stepping forward which will be really challenging for the researchers. Therefore you can think of implementing data mining or big data processing mechanism to process those sorts of data. That will be great and practical, effective as well. moreover, you have thought to work with security measures. That is also a good perspective. You can think of data security while transforming from one device or sensor to another one. you can implement an automated system which will automatically encode all the information transforming from one to another. However, preventing hacking will be the most crucial fact. since millions of devices and sensors will be connected so it's not quite tough to hack any of them and steal information. so you can also think for a remedy of it. Considering autonomous mobile agents (i.e., mobile code) as a distributed computing paradigm for the IoT, serious security issues arise. We developed a agent processing platform that executes mobile javascript code, and agents can migrate between different devices seamlessly, including smartphones. On one hand the agent should operate autonomously without intervention of users and machines, but on the other hand lightweight authentication and authorization is required. Actually there is no complete solution available!
I would ask a few more requirement questions, like, is the term security referring to protecting the integrity of the data or the use of IOT as a security tool - like a motion sensor detector that does not activate if you are wearing an appropriate RFID or Bluetooth badge?
Focusing on the first item, protecting the data integrity (where spoofing is generally used to bypass or infiltrate), Bluetooth just came out with a complete rewrite of the Bluetooth application, which adds so much more functionality. This functionality is so new, that market forces have not had a chance to harden the product with security patches. There are at least 5 layers of security within BLE5, which vary from Auth-N (Permission Access, a.k.a. are you a valid user with valid credentials?) and Auth-Z (Authority Access, a.k.a. do you have permission to do take a specific action?). That introduces 5 new potential high-jacks.
Edge routers or border-routing is going from one radio frequency to another, in order to crossover from say, Bluetooth to Wifi, where you can take your locally collected sensor data accumulated via Bluetooth and use Wifi to publish the data to the cloud. Terms such as LoRA, 6LoWPAN and Sigfox will provide you with a clearer image on the variety of Radio Frequencies being considered for IOT. If you authenticate with Bluetooth and then pass the data to Wifi or Lora, how do you ensure the authentication and permissions are passed too?

Working in the insurance sector has open my eyes to the merging of every day devices and technology and how they can enable things but, then present a new set of security challenges for all these special use cases.

In my opinion, one of the strong development in the future years of applications of integrated technologies will be technological solutions based on the combination of Internet of Things technology and Blockchain. The view currently prevails is that there are potentially many uses in the future for integrated Internet of Things technologies and Blockchain. The Internet of Things allows you to develop technologies for remote control of various devices from the level of, for example, a smartphone. Blockchain, on the other hand, ensures a high level of security and decentralization of information transfer on the Internet, including the execution of financial transactions via the Internet. In addition, in the coming years, the use of information processing and analysis techniques will grow in Big Data database systems in conjunction with data processing in the cloud with access to Big Data database systems from mobile devices, and thus the possibility of combining these technologies with technological solutions typical of the Internet of Things.
Blockchain is a very hot topic now. Blockchain can combine with IoT to build industrial applications, such as smart healthcare, smart industry, etc. Some interesting research directions in blockchain with IoT are reviewed in our very recent survey paper.
