Look into ROSA mice (129S-Gt(ROSA)26Sor/J; JAX stock# 14538) which express loxP-flanked STOP cassette which prevents GCaMP3 expression. U will have to breed/cross the ROSA mice with a suitable cre transgenic mouse to express GCaMP3 in your tissue/cells of interest.
I myself have never worked with such mice but I've heard from others that it's relatively easy to bleach GCaMP3. Thus you will have to go easy on the excitation light intensity and contend with a relatively lower signal level (unless its a really short experiment). There are newer/ possibly better GCaMP variants in the pipelines in several labs so if you need a more sensitive system and have an extra year you may find it worth to wait a bit for the new variants (look for GCaMP5) or treat the GCaMP3 experiments as a stepping stone and experience in case they fail.
