Please, i how do i preserve the gastrointestinal tract of fishes for E.L.I.S.A viral analysis?

Those guys have many protocols on sample colection and preservation.
Simplest thing to do is keep it in a freezer at -80º C or colder.
Keeping it on liquids like formaldehyde or 70% alcohol is a other option. You risk dilution of the antigen that you're tring to detect.
And formaldehyde is not the healthiest of products.(carcinogenic)
