From my understanding of genetics, every cell contains the full complement of chromosomes in the nucleus. Why do you think there is no crossing over or gene conversion at this developed stage? What is stopping the gene network from constantly evolving, that is, is there an enzyme or chemical that could be preventing constant changes to our genetic expression after pregnancy?
Why do you think cell genetics don't change? They do all the time, especially when exposed to chemical, UV etc and in worst case it leads to cancer. Of course there is DNA repair going on a lot and apoptosis to counter that too as well as the immune system checking unknown proteins though.
All these things are possible but less likely. Our body have mechanisms to ensure fidelity of DNA, our genetic code. However, considering that each human is made of billions of cells and cells undergo many more billion divisions during the life of a human, small changes do develop in DNA code. Mostly, these are benign (or mostly benign), occasionally these changes result in the dysfunction of an important pathway and cell dies. Sometimes, these changes convert cells into cancer cells. So yes, if we take cells from your one tissue and another group of cells from another tissue and do high-fidelity while-genome DNA sequencing, we will find several differences (in thousands) between DNA from cells from different tissues from the same person.
