When the premixed combustion model enabled- the mixture option is blocked and i left with the fluid and solids and there is no space available to specify the species concentrations at my corresponding equivalence ratio!!
does anyone have a solution for that?

Sherif, I think it's pretty straight forward. You first choose the Premixed Combustion Model under Models>>Species, then go to Materials and define your gaseous substances. Later, from the Boundary Conditions you can define the ratios at every inlet, point, etc. That's what I do for my ventilation models with more than one species anyway.
