I have already successfully installed eucalyptus cloud on VMware, Can any one say me how to add new image in eucalyptus cloud using GUI and how to launch the added image instance, if possible step by step guidance or any related video link to that.....

Check out this website for very good "how tos" for server installations. They also do desktops as well. However, they take a comprehensive approach and will possibly install far more in the way of programs that you might want. However, the principal of the installation will help guide you through the process. I would suggest you practice with a simple desktop machine with an empty hard drive for practice. Do the install multiple times until you feel comfortable with the process. You can reinstall as many times as you like if you format the hard drive every time you do the reinstall. Once you are really comfortable with the process, you can try some other installs until you have covered everything you need. Do not start installing anything in your cloud instances until you are really comfortable with this process.
Bear in mind that the basic install will be insecure, which could be fine if you want to use your server systems as penetration testbeds.
As for the Kali linux desktop, the default install will give you all the basics, as well as the installation links for a whole host of attack tools. For your initial setup testing only install a few tools just to be comfortable with the process, then do a full reinstall again until you really understand how to do it properly. For your Windows server, you will need a proper set of installation disks with the COA code to go with it. It will likely have far more software than you will need. Do not worry about that until you are comfortable with the installation process.
Once you understand what you are doing with a simple desktop, then you will be ready for the cloud install. There will be slight differences in your approach, due to the way the cloud instances are configured, but with your new experience of installing on the desktop, you should easily be able to figure it out as you go. They have a vast range of installation guides and they are very good. The only thing, as I said before, that they will mostly do a 'belt and braces' approach with often far more programs than you will really need.
