Does anyone have an idea for measuring metabolites of fruits and leaves considering dry weight is better or fresh weight?

Thank you for your kind answer, but don't you think that some acids like pyruvate acid or others which are parts of metabolites are more soluble in water, and if we use dry weight we will lose them.
I do not think that specifying dry and wet weight in terms of expression will affect the result.
but in terms of analysis, I wanted to express that if we do drying with lyophilization, the recovery of phenolic compounds is higher.
