Update: From a similar discussion in Mathoverflow, it seems that it comes from Aizerman and Gantmacher's book, where the use S in equation (12). Any reason to use S in the name of this function?

Aizerman and Gantmacher book uses "S-method" in 1964. It seems as if it was a trivial name since they were using a funcion called S to bound the derivative of the Lyapunov function :-(
It seems that there is no particular reason to use S as the name of the method in English.
S-curve is a name used often to represent a trend.
The trend for revenue from sales, for example, normally follows a profile of an S-curve. This is often shown for both market growth and a market decline.
Together they form a bell shape. In the growth S-curve case, for instance, the rate of growth is slow in the beginning, increases quite rapidly in the middle zone and then again slows down as it reaches the peak revenue.
