You have to know the PKa of the ionizing groups of your zwitterione. Then, you can set the pH of your medium to have a final possitive or negative chargue. In function of this you can use a cationic or anionic resin to inmobilize it.
US patent 6,884,345 has info on this. Professor Irgum, the inventor of such materials has extensive publications on this in this area so I'm sure you can find more info with a search on his name.
